I'm currently in the process of studying/budgetizing the move of our theatre whole technical system from analog to digital networking.
One thing i haven't been yet able to find (be it hardware or software) is a way to record both audio and video streams on the network without having to decode the signal and re-encode into the recorder. I know that for audio there are multiple DAWs that can do this but what about both video and audio at the same time?

We understand your need. At this time there are no Milan-ready devices that support video and therefore no capability of recording the audio and video streams. The underlaying AVB technology is capable of uncompressed, time-sensitive video transport, though the video standards in Milan are yet to be created.
